Hi Jo Lis, Thanks so much for reading! I agree on the value of sprouting and proper food preparation in general. If you get into the rhythm of it, it's not hard to do and makes a big difference, but it's information that's rarely shared (I didn't think to include it here, case in point!).
I also agree with your caveat on "eat the entire animal." In my case, I'm allergic to soy and a few other foods which makes it hard to go 100% plant-based, but knowing how most animals (even "grass-fed, cage free" are treated, it's a balancing act.
